What a tasty green drink this is! I have to admit that I am not a big fan of smoothies. I went through a phase a few years ago where I drank a smoothie everyday, and then all of the sudden I just couldn’t stand the taste of them. So I typically stick with making plain protein shakes each day, and fruit smoothies are a rare occurence.
I was inspired to make this green smoothie from our recent trip to Mexico. I tried my first agua de chaya and really liked it (this is basically a spinach-like plant blended with water and juice). I had just received a gorgeous bunch of fresh, local spinach from the Produce Box as well as a huge cucumber, and I also was unfortunate enough to catch my husband’s cold, so was looking for an extra boost of veggies to knock out those germs.
I thoroughly washed half of the spinach, and cut up half of the cucumber. I like spicy food and drink, and thought that adding jalapeno sounded like an awesome idea. I keep a bag full of diced jalapenos in my freezer, so I grabbed a small handfull of jalapeno pieces for the smoothie. I also added about a 1/2 cup of lime juice, and a splash of water.
What an easy and refreshing green drink!
- Large bunch of spinach
- Half of one large cucumber
- 1/2 C lime juice
- 1/2 of a jalapeno
- Splash of water
