I have been reading quite a bit about the wonders of Jackfruit, and how it can easily be cooked to taste like pulled pork. I so wanted to try jackfruit, but had been unable to find any around here.
We happened to be in Charlotte, NC last weekend and I found an awesome vegan restaurant, Bean Vegan Cuisine, for lunch. They had BBQ Jackfruit tacos!! I was so excited, and they were as tasty as I had hoped. Then we really lucked out because Bean also had a store inside their restaurant. While roaming through the store, I found cans of Jackfruit for $1.99 a piece. I couldn’t believe how cheap it was. I bought 2 cans, although now I wish I had bought more!
So on this lazy Sunday, I decided to try a quick and easy spicy “pulled pork” Jackfruit taco. It was unbelievably easy and delicious. I hate to admit it, but I pretty much inhaled 3 of these tacos. Even my husband ate one and was pleasantly surprised (he is not vegan).
I used a can of green jackfruit in brine. I drained the can and then dumped it onto a plate. It looks a little funny, but doesn’t have much of a smell. It’s a pretty neutral fruit. Make sure you remove any hard seeds from the fruit, and then you can shred the fruit with your fingers as you drop it into the pan.
I was feeling lazy, so I used minimal ingredients. I cooked the Jackfruit with a can of Hunt’s hot chili sauce, and a few green onions. I also added a splash of apple cider vinegar to balance out the heat from the chili sauce.
I let all the ingredients cook together for approximately 20 minutes, until the Jackfruit had absorbed the flavor and the sauce was nice and thick. I spooned some of the Jackfruit mixture onto a corn tortilla and topped it with a bit of Just Mayo. This added a nice touch of creaminess to balance out the spiciness of the Jackfruit. I had hoped to also add avocado, but my avocados were not ripe yet, so I just stuck to the vegan mayo.
Later, I decided to try it in a lettuce cup for a lower carb version, and it was pretty tasty. I liked how the fresh lettuce was a nice contrast to the spiciness of the jackfruit. Jackfruit really is such a great healthy, low calorie option to replace meat in your recipes!
This was an incredibly quick and easy meal. It tasted great and was super satisfying. Jackfruit seems so versatile and healthy, I will definitely be experimenting with it more. If you can’t find Jackfruit near you, it can be found on Amazon.
